For all occasions, our service is "white-gloved": we source 100% of our product and service requirements well in advance of a day's event; we will arrive at least one hour before the start of our service; we are responsible for the entirety of our set-up and take-down including disposal. We are courteous and gracious. Site inspections prior to the day's event may be performed as necessary.

Private Event Package:
This package is designed for individuals who wish to host an oyster feast at their private residence or to hire us as oyster caterers for events such as weddings or corporate gatherings. Our small and mid-sized event packages are considered "tasting" events at which educational information can be communicated throughout service if requested. Accordingly, a choice of up to four oyster types is available so that their varietal differences can be discussed. Our largest event package is considered a "production" event at which large volumes of oysters can be opened and served but our conversation abilities are limited. A choice of up to two oyster types is available in this setting. Four accoutrements are served at every event: freshly squeezed lemon juice, a cocktail sauce, a mignonette and a hot sauce. Either of our oyster stations, our counter-top sized shuck-truck or our cart-sized shuck-shaw, may be used depending on the event setting. Package costs are relative to the amount of oysters and number of servers requested.
Restaurant Mobile Oyster Bar Package:
This package is designed for Southern Maine restaurants that do not have an in-house raw bar but would like to offer their clientele special "oyster-night" events. These events may be co-branded if appropriate. Restaurants will benefit from added publicity, event draw on weekdays and the opportunity to up-sell through accompanying cocktail specials and menu options. Suggested event frame: "$5 for 5 Oysters Happy Hour Special, 5-7pm". One oyster type and four accoutrements are available with our restaurant package. Either of our oyster stations, our counter-top sized shuck-truck or our cart-sized shuck-shaw, may be used depending on the event setting. Package cost is calculated by the hour.
Caterer Mobile Oyster Bar Package:
This package is designed as a sub-contracted service for Maine-based caterers who wish to add an oyster shucking option to their offerings. When your client requests an oyster service to be part of their event, you need only to contact O' Oysters with the event details. O' Oysters will seamlessly integrate our oyster selection and production into your service plan. Food Festivals:
Our shuck-shaw is our primary food festival cart. Designed for mass-production, two carts together can host up to 4 shuckers and 1200 oysters. The O' Oysters festival production is designed to serve oysters buffet style so that there is no hesitation in service. In this environment of brisk production, only one variety of oyster will be offered. Four accoutrements will be available and applied by our shuckers.
Street Sales:
Our shuck-shaw is our primary street cart. Styled to resemble a 19th century NYC oyster cart, the shuck-shaw is sure to attract attention. Operating on the streets of downtown Portland, ME, in the parking lots of partnered businesses, or with an assembly of food trucks, the O' Oysters street cart is designed to serve oysters shucked to order. In this environment of brisk production, only one variety of oyster will be offered. Four accoutrements will be available: freshly squeezed lemon juice, a cocktail sauce, a mignonette and a hot-sauce.
